Purpose of Job Under the guidance of the Head Chef, to help with the day to day preparation and service of food, ensuring that the highest standards required by the hotel are maintained at all times. To ensure that strict hygiene controls are kept in all kitchen areas under your use. Main Duties and Responsibilities · To maintain a high level of personal hygiene. · Ensure all food preparation and delivery meets and exceeds the necessary hygiene control requirements of Company Policies and of the HACCP regime in particular, and to ensure that the testing and records to prove this regime are carried out correctly. · Ensure security within the department. · Ensure compliance with all relevant legislation which affects the business, including (but not exclusively) Health & Safety Regulations, Employment Regulations and Environmental Regulations. · To assist the Head Chef and Sous Chef in being responsible for the management of all food production to clients within the hotel. · To work the allocated section to produce the required dishes on time, and to the standard laid down by the Head Chef. · To help in the preparation of regular food items, daily specialities and any other special functions. · When required, assist the Head Chef with stock control, ensuring that stock levels are in line with Company requirements, and to avoid wastage. · To maintain high levels of communication with all Chefs at all times, in particular ensuring special messages / requests are dealt with promptly. · When required, check all food deliveries for quality. · Prepare food requisitions in accordance with daily routine, taking into account advance planning, special bookings and staffing levels. · To ensure that maximum effort is given to achieve an efficient service whilst maintaining the highest possible standards. · Generally being alert for opportunities to improve the profitability of the Kitchen operation. · Controlling the wastage of food. · Be aware of responsibilities for economy of utilities, such as use of gas, electricity and water. · Ensure that all defects are promptly reported to the Head Chef. · To maintain effective communication between Kitchen and other Departments within the hotel, paying particular attention to Restaurant, Room Service, Bars and Banqueting Departments. · To attend meetings, courses, lectures as directed by the Head Chef. Knowledge and Skills required · To ensure that all refrigerated areas are kept clean and temperatures are maintained at correct levels and recorded in the correct manner. · Carry out any other tasks which may be requested by the Chef de Partie, Sous Chef, Head Chef, Operations Manager, General Manager or a Director. · Must have a passion and love for food. · Possess minimum Level 2 Hygiene Training for Food Safety, or the ability to possess. · Knowledge of the hotel and leisure industry. · Understanding of the operational requirements of a hotel food delivery service. · Organised and systematic. · Maintains high standards for customer service. · Ability to establish good working relationships with other staff, guests and visitors. · Knowledge of all statutory requirements affecting the food business, with specific knowledge of HACCP hygiene controls. · Clear communicator and confident manner in dealing with others, both by oral and written means. · Basic IT skills – knowledge of spread sheets / word processing. if you are interested in this role, please click on the apply button below.
